NATURAL COOKERY SCHOOL

 

New to cooking? Seasoned cook, but need a but of inspiration? Or trying to eat more whole foods and vegetarian meals? Woodruffs cookery classes are just what the doctor ordered. Erin Baker is a certified whole foods instructor with more than 10 years professional experience of vegetarian cooking with whole foods.

The gourmet vegetarian cookery classes are held at Woodruffs café and are very hands on. Erin conveys a general knowledge of cooking in a relaxed and fun atmosphere while providing a professional demonstration and instruction for the evening’s theme.

The evening commences with nibbles and drinks while listening to a talk about ingredients and methods before moving into the kitchen. We will provide you with the recipes, ingredients and equipment to cook your way through the evening, before sitting down to enjoy the fruits of your labours with a drink and a discussion about the process. No washing up, though, we’ll do that!

Our Vegetarian Cookery Classes at Woodruffs are taught by our previous Head Chef Erin Baker, a certified chef tutor with more than 20 years of professional experience in vegetarian catering. Her recipes are full of seasonal vegetables and influenced by world flavours.

MIDDLE EASTERN MEZZE 17th May

FULLY BOOKED The food of the Middle East has become increasingly popular lately, the best way to celebrate this tasty cuisine is with a mezze platter comprised of a selection of small dishes. Learn how to create your own mezze including gorgeous flatbread to serve your feast with. Example Menu: Tabouleh/Baba ghanoush/ Hummus/Zza’atar flatbread/Marinated olives/ Traditional falafels

SENSATIONAL SALADS 21st June

Woodruffs has always been home to creative, seasonal and delicious salads. Full of flavour and easy to produce once you know a few secrets. This class will take you through a variety of salads including using seasonal veg, beans/pulses and grains. You will learn how to compose a salad and create a dressing without a recipe allowing you to use what is on hand, in season. These salads can be enjoyed as a side or are substantial enough to be a whole meal. Sample Recipes: Quinoa Chickpea & Pesto /Lentil Salad wth Salsa Verde/Spicy Peanut noodles with Asian slaw/Pea, mint and radish with sumac/Gado Gado – steamed vegetables with peanut sauce

VEGETARIAN BBQ 19th July

Summer should be full of veggies and the bbq is the perfect place to showcase the range of flavours, textures and colours. It’s not all about burgers and sausages! We show you how to make veg the star of the show with these sizzling vegetarian BBQ recipes. This class is filled with perfect goodies to share in your garden, pack in the hamper, on a blanket at the beach or a bbq with friends. Samples Recipes: Black bean burgers with chipotle mayo/Tofu and red pepper satay/Portabella, peach and Stilton on ciabatta/Paneer tikka skewers with raita/ Marinated aubergine with tahini

MOROCCAN NIGHTS 20th September

In this class we will gain insight to the enchanting culture of the Moors by creating traditional foods with authentic ingredients. We will discover how to make homemade harrisa, gorgeous stuffed flatbreads, tasty tagine and light fluffy couscous. Example menu: Lemon and pomegranate couscous/ Fragrant squash tagine with lime/ Chick peas and spinach with chermoula/Orange and date salad with sumac/ Spring onion and parsley stuffed flatbread

MEXICAN FIESTA 27th September

Mexican food is a fiesta for the taste buds, full of fresh ingredients and complex flavours. Spend the evening learning the about the ancient culture and ingredients and how to use them. Dried chillis, soft tacos, tomatillos and corn will take centre stage. Sample recipes: Mango and sweetcorn soft tacos/Black bean enchiladas with salsa rojo/Tamales with salsa verde/Variety of salsas and guacamoles/Refried beans and red rice
